-1 pound chicken breasts

-1 teaspoon chili powder

-1/2 teaspoon cumin

-1/4 teaspoon paprika

-1/4 teaspoon garlic powder

-1 can black beans, drained and rinsed

-1 tablespoon olive oil

-Salt and pepper to taste


Instructions:

1. Preheat the oven to 400 degrees Fahrenheit.

2. In a bowl, mix together the chili powder, cumin, paprika, garlic powder and onion powder. Season the chicken breasts with the spice mixture and then coat them in olive oil.

3. Place the chicken breasts on a baking sheet and bake for 25 minutes or until cooked through.

4. Meanwhile, in a skillet over medium heat, cook the black beans and corn until heated through. Season with salt and pepper to taste. Serve the skillet dish topped with the cooked chicken breasts and beans.

-1 lb. chicken breasts

-1 can black beans, drained and rinsed

-1 can diced tomatoes

-1 tsp. chili powder

-½ tsp. cumin

-Salt and pepper, to taste

Instructions: Preheat a skillet over medium heat. Add the chicken and cook for about 5 minutes per side until cooked through. In a bowl, mix together the black beans, tomatoes, chili powder, cumin, salt and pepper. Add this mixture to the skillet and stir to combine. Top with shredded cheese and sour cream (if desired).

Skillet Spicy Chicken Chili

Ingredients:

-1 pound ground chicken

-1 large onion, diced

-3 cloves garlic, minced

-1 can (15 ounces) black beans, rinsed and drained

-1 can (14.5 ounces) diced tomatoes with green chilies

-1 tablespoon chili powder

-1 teaspoon smoked paprika

-½ teaspoon cumin

-Salt and pepper, to taste

-Shredded cheese (optional)


Instructions:

In a large pot, Dutch oven, or skillet over medium heat, cook ground chicken until browned. Add onion and garlic; cook until softened. Drain any excess fat. Add black beans, tomatoes with green chilies, chili powder, smoked paprika, cumin, salt and pepper; bring to a simmer. Reduce heat to low; simmer for 30 minutes. Serve with shredded cheese if desired.
